cream cheese cookie bars...

It's been a long time since I posted a recipe! I baked these super-easy-to-make bars a few days ago (with camera in hand) and even though they're long gone, I can still share the recipe with you if not an actual cookie!

Cream Cheese Cookie Bars

2 pkgs tube chocolate chip or chocolate chunk cookie dough
1 8oz pkg cream cheese
1/2 cup icing sugar
1 egg yolk
splash of vanilla or almond extract

Open one tube of dough and cut into rough slices. Press into a baking pan. An 8x8 or 9x9 pan is a great size. Mine is about 8x10 or so.
Cream together cream cheese, sugar, yolk, and extract.
Spread over dough.
Open second tube of dough and press on top of filling. You can work it into a solid piece of dough, or if you're in a hurry like I was, leave it in circles.
Bake for about a half hour - 40 minutes at 350, until cookie is baked.
Cut into bars and enjoy... with milk, of course!

I need to take dessert to my daughter's at the lake Sunday. I think this will be it. Looks yummy.
