easy way to eat your veggies!

I made the awesomest (is that even a word?!?) carrot cake last night to take to a friends' place when they had us over for dinner. It was based on Recipezaar recipe #54... the only little change I made was to use 1 cup of oil and one individual serving of unsweetened apple sauce (like Mott's) instead of 1 1/4 cups of oil, and then I threw in raisins and walnuts as well.

There's a little left... wanna come for tea and cake?

Kim, I am in the midst of a sweet tooth attack so your invitation is very tempting... have no idea how long it would take me to get there from Maine, but chances are the cake would be gone. Looks delicious.

This looks delicious. We love carrot cake over here so I think I will try this recipe for sure!
When my kids were little I would put veggies in everything....shredded carrots in sloppy joes, shredded squash or zuchinni in meatloaf, etc. etc. It's a great way to eat an extra helping of veg!
